Making authenticity the heart of a restaurant project is like returning to one’s roots. I remember the family gatherings of my youth, when my mother, Michelina, would cook for the crowd. Sometimes there would be fifteen or more of us around the family table. Mom never failed to call on me to help stir a soup or roll gnocchi. I remember my satisfaction at seeing people savour the food that very evening.

Today, bustling about in my open kitchen, I get the same satisfaction when—out of the corner of my eye—I see clients getting their plates, or simply enjoying their meals. When the restaurant is full, the aromas, the effervescence, and the movement delight me, reminding me of those meals of my youth.

Thank you for joining us, and buon appetito.

It’s all about the dishes, of course, but ingredients—and combinations of ingredients—are key. Inspired by a season, a region, the pleasant memory of a trip somewhere, a friendship with a grower, an impulsive stop at the market, the appreciation of my two associates Pierre and Alexandre, and a wealth of other things… provided they remain authentic.

In vino veritas
We have chosen these wines for you with the utmost care so that they offer the perfect companion to Graziella’s cooking.  Here, too, the ideas of sharing and of pleasure are at the heart of what we do.

The result is one of harmony and discovery.  We favour small and independent wineries that have earned their renown as producers of fine wines.  Their wines capture the essential character of their regions and of the vines.

We choose vintages – most of which are privately imported and intelligently grown through biodynamic or organic methods – that marry character and elegance, just like the dishes created by the magic hands of a great chef.  You will find a range of wines to please every palate.

In the first French edition of The Silver Spoon – the renowned food lover’s bible for nearly half a century that is now available in English – Graziella offered one of her tantalizing recipes.  The book became a huge bestseller and Graziella’s reputation as a chef soared.  The reason for both is simple: to share a pleasure it to increase it’s worth tenfold.  Graziella invents thrilling meals and nurtures the artistry of cooking culinary treasures that are accessible to all.  Her recipes have been published around the globe and her peers have bestowed on her the honour “Restaurateur and Chef of the Year”.  Despite the accolades she retains the essential grace that have marked her kitchen and her life.

Apparently Pierre tumbled into a wine barrel at a very early age. Thus began his love of discovery and his festive spirit.  As the Grand Wine-Master of the house, he’s constantly building and renewing lovely wine-lists, drawing on the exceptional smaller wineries that he tends to favour.  Pierre intense focus on his customers explains why his attention to detail sets his cellar apart.  For over twenty years his following has grown as people come to experience the joy of exceptional food accompanied with equal distinction.

Alexandre is a Maître d’ of remarkable elegance.  Like Pierre, he shares in the artistic passion for those two colours of their rainbow, red and white.   He plays his part to perfection, one that he sees as being an enabler and a facilitator.  Graziella patrons are familiar with his innate talent and new customers recognize his ability and understated enthusiasm on the very first encounter.  His quest for harmony and his unerring good humour are an integral part of the place.  A smile, after all, is an essential ingredient of any cuisine that aspires to greatness.
